The Holiday festivities and eating have begun. It can be a challenging time to decide that for THIS YEAR you are going to stick to Phase 1 Ideal Protein protocol and continue your weight loss journey. Here are some simple ideas and then a couple of recipes to help you to ENJOY the Holidays and be true to ;your goals.

  1. Enjoy the People and events more than the food!

  2. Bring along something you CAN eat in case there aren’t any viable options. Be the one who brings that fresh pretty veggie tray, or deviled eggs, or try some of the recipes from Janeva’s cookbook. I have a salmon recipe that I made up that is a favorite! It is on our facebook page, but I will share whenever asked!

  3. Eat before you go, and stay hydrated with water or enhanced water.

  4. Presentation is important too! Put your Ideal Protein pudding or dessert into a fancy serving dish. Pay attention to the pretty colors on your plate. Spend an extra minute on your food plating, so you can savor your food.

  5. Don’t be afraid to try new vegetables and recipes. Stick to the sheet, and get creative.

Chef Varati’s Thanksgiving Stuffing

CHEF VERATI’S THANKSGIVING STUFFING Phase 1, 2, 3
Makes 10 portions.

INGREDIENTS:
- 2lbs ground turkey
- 2 lbs ground extra lean veal
- 2 lbs ground extra lean pork
- 2 eggs
- 12.5 oz extra firm tofu
- 4 cups diced zucchini (green summer squash)
- 1 tsp of mace or nutmeg
- 1 fresh jalapeño, finely diced
- 1 tbsp of garlic powder
- 1.5 tbsp of pumpkin spice
- 2 tbsp sea salt, or add to taste
- 1 tbsp pepper, or add to taste

INSTRUCTIONS
1. Mix all ingredients together, cook in pan at medium-high heat.
2. Empty baby pumpkin and fill it up with your cooked, hot stuffing.
3. Enjoy!

Pumpkin Spice Latte Pie

CHEF VERATI’S PUMPKIN SPICE LATTE PIE Phase 1, 2, 3
Makes 4 portions of 3 pies

INGREDIENTS:
CRUST:
- 2 IP Maple Flavored Oatmeal packets
- 1 egg white
- 2 tbsp water
FILLING:
- 1 IP Pumpkin Spice Latte Drink Mix packet
- 1 IP Vanilla Pudding Mix packet
- 200 ml/7,25 oz water

INSTRUCTIONS 
1. Preheat oven to 375 °F
CRUST:
2. Mix all the ingredients together and pour it in pie mold (create 4 equal portions)
3. Cook for 10 min at 375 °F and let cool.
FILLING:
4. Add the cold water in your IP shaker, pour the packets of Pumpkin Spice Latte and Vanilla Pudding Mix and shake well! 
5. Pour inside your cold crust, serve and enjoy!


Pumpkin Spice Latte Rice Pudding

CHEF VERATI’S PUMPKIN SPICE LATTE RICE PUDDING Phase 1, 2, 3
Makes 2 portions. 1 portion = 2 glasses

INGREDIENTS:
- 1 IP Vanilla Pudding packet
- 1 IP Pumpkin Spice Latte Drink Mix packet
- 2 cups cooked cauliflower
- 3 tsp pumpkin pie spice
- 300 ml/10,5 oz of cold water

INSTRUCTIONS:
1. Cook the cauliflower in water with 2 tbsp of pumpkin pie spice, strain, set aside & let cool down
2. Put the cauliflower in blender, and lightly blend to create a rice-like texture
3. Add the water to IP shaker, add the envelopes and shake well
4. Mix with 1/3 of the (cauliflower) rice
5. Pour the mixture in 4 glasses, add the leftovers on top
6. Serve cold. Bon appétit!
TIP: Leave to chill for 24hrs for the rice to absorb all the flavors!
